Wakefield is famous for its rhubarb growing capabilities, in fact, a few decades back, over 90% of the world's forced rhubarb crop was grown in the Wakefield area.
Rhubarb was imported into this country several decades ago but it is suggested that the treating of the soil with the by-products of the local textile industry gave the area its edge in production.
Liquorice has been made in the town of Pontefract since mediaeval times, and the tradition continues today. It is commonly thought that the reason liquorice grows in Pontefract is due to the large amount of clay in the soil.
