Rhubarb is a vegetable that is commonly used in desserts and baked goods. It has a tart flavor and a bright red color that makes it a popular ingredient in pies, crumbles, and jams. Rhubarb is also known for its medicinal properties, as it is high in antioxidants and has been used to treat digestive issues. Interestingly, Yorkshire is known for its production of forced rhubarb, which is grown in dark sheds to produce a sweeter and more tender stalk. This tradition dates back to the 19th century and is still celebrated today with the annual Wakefield Rhubarb Festival.

Yorkshire Forced Rhubarb is a special kind of rhubarb that is ‘forced’ to grow during the darker winter months. It was awarded Protected Designation of Origin status in 2010. It is more slender and sweeter than other rhubarb and is in season from mid-January to March.
