This is a wonderful slow roasting joint, full of flavour and falls off the bone, delicious gravy. This Herdwick Hogget Shoulder on the Bone is a sensation when cooked long and slow; it can carry strong flavours and yet is delicious in its own rich juices. It falls off the bone and is succulent and moist. This Herdwick Hogget is dry aged for 7 days to enhance the texture and flavour.   Our Weekly Market Herdwick Hogget is farmed by Jon Watson at Yew Tree Farm, Cumbria.
