The Cabernet Sauvignon grapes are sourced from old vines in Parcelle 8 of the Clos Apalta vineyard in the Apalta Valley. After manual harvesting and temperature-controlled fermentation in French oak vats, the finished wine ages in oak barrels (75% new) for 20 months before bottling unfiltered. Its aromatic profile is broad and expressive, with notes of blackberry, blueberry, and black cherry, followed by hints of cedar and spice, with nuances of violet and olive.
