Product Description

Drink it now or cellar for up to 20 years. No need to decant but best to open it half an hour before service. The prestigious Burgundian winery, Francois Carillon, was founded in 2010, but the Carillon family's winemaking tradition dates back a long way, beginning in Puligny with Jehan Carillon in 1520. Today, the estate's vineyards extend across 16 hectares, spread across the Puligny-Montrachet, Chassagne-Montrachet, and Saint-Aubin appellations, where Chardonnay reigns supreme. The Chardonnay grapes are selected from the approximately two-hectare Premier Cru Champ Gain plot, located high on the slope next to the Murgers des Dents de Chien in Saint-Aubin. Here, the vines, over fifty years old, are rooted in a clay-limestone soil dotted with small pebbles, which favors a slow ripening of the grapes. In the glass, the wine reveals a brilliant straw-yellow color with golden highlights. Its aromatic profile is broad and linear, with notes of lime, white peach, and pear, followed by mineral and spicy notes. On the palate, it is elegant, energetic, and fresh, with a delicate minerality and a long, slightly savory finish. It is a wine that can appear shy at first but then reveals all its expressiveness and refinement. Leave it in the cellar for a few years or enjoy it with lemon and herb roast chicken.
