A renowned estate in the Côte de Beaune region of Burgundy, Domaine Boisson is a family business founded by Bernard Boisson and now managed by his children, Pierre and Anne. In addition to the family vineyards, both produce their own wines separately. Pierre Boisson, in particular, makes a range of wines from his 3.5 hectares of vineyards. His Bourgogne Blanc is a precise, elegant, and mineral wine, in keeping with the estate's style. The vines are cultivated with respect for the terroir, without the use of synthetic substances. The Chardonnay grapes come from high-altitude vineyards planted on stony, limestone soils. These conditions favor the production of a fresh, taut wine with a mineral character. In the glass, the wine reveals a clear, bright color with silvery highlights. Its aromatic profile is lively and fragrant with fresh citrus and green apple notes, followed by floral nuances and hints of butter and chalk. On the palate, it is balanced, fruity, and tense, with a crisp acidity and a well-defined mineral touch. It is vibrant, with a long finish that realls toasted notes. It is the ideal wine with seafood, but also pairs well with goat cheeses and lemon-roasted chicken.
