Set in the foothills of the Pyrenees in southern France, Limoux excels at Chardonnay. Domaine Paul Mas is leading the way in showcasing the potential of the area and the wider Languedoc region, growing from just 35 hectares of vineyard to nearly a thousand in the space of 25 years. Owner Jean-Claude Mas certainly has vision, but it’s his uncompromising approach to winemaking that really makes the difference. The grapes for this white wine are handpicked and whole bunch pressed, then aged in oak for eight months. Full-bodied, creamy and with flavourful layers of tropical and stone fruit, this is a real food wine. Try it with white meats, fish or creamy dishes.
