Steelhead trout (Oncorhynchus mykiss) is the rainbow trout that migrates to the sea. It thrives in our Scottish sea lochs, where it has been farmed for nearly 50 years. This fish has an excellent underlying sweetness and fairly robust texture that make it perfect when grilled. It is also incredibly versatile and can be used in a number of cuisines. In the sea, the Steelhead grows far bigger, leaner and more athletic than a river trout, akin to a salmon, but with a sweet, delicate flavour and outstanding firm texture.
