Retribution Distilling Single Cask Aged Rum, 70cl

Retribution Single Cask Aged Rum is the first ever cask of rum laid down to mature at this boutique Somerset distillery. The rum is fermented for at least 7 days and then distilled in a unique direct fired copper pot still. Next comes ageing in an ex-bourbon Jim Beam 200L cask for 3+ years which has created a seductive depth of flavour and smoothness despite the hefty 58% Alc.. Alex's Tasting Note: Intensely aromatic on the nose with candied orchard fruits and demerara sugar. The vanilla notes from the bourbon cask are well integrated and softly fragrant with tropical fruit overtones.. At 58%, I'd recommend adding some water to drink, as you would for a fine single malt whisky. This opens up the rum and emphasises the vanilla as well as bringing some apricot and lychee flavours to the fore. With a long, lingering finish, this is wonderfully drinkable and one to savour slowly for maximum enjoyment!.
