Shropshire Bresaola

Shropshire Salumi's make their traditional Shropshire Bresaola with locally reared air-dried silverside beef, cured with black pepper, garlic, chilli and orange zest, all marinated in red wine.. Each batch is made by hand in their north Shropshire HQ, hung for up to 30 days to maximise the flavour.
