It comes from king salmon and has an intense taste, so should be used sparingly.  The taste is matched by the bursting sensation you get when you bite them - like "solid champagne". Keta is often used as a garnish or to complement a beautiful sushi roll. It comes in a jar and is one of the few products we sell which is not frozen (although it freezes fine).
