Drink it now or cellar for up to 15 years. It is recommended to decant it for half an hour. Domaine Charly Nicolle is located in the Chablis wine region of French Burgundy. Charly comes from a sixth-generation family of winemakers and wine merchants. After studying in Beaune, he established his own business with the support of his wife and family, producing excellent Chardonnay-based wines from the estate's 26 hectares of vineyards. The Chardonnay grapes come from a one-hectare vineyard in the Premier Cru Mont de Milieu, located in the municipality of Fleys. Here, the vines, between 50 and 60 years old, are rooted in Kimmeridgian marl soils. After harvesting and fermenting at a controlled temperature with indigenous yeasts, the finished wine ages for just over a year in a mix of steel tanks and oak barrels (approximately 20%). In the glass, the wine reveals a bright pale gold color. Its aromatic profile is delicate and fresh, with fragrant notes of citrus and acacia blossoms on a mineral and iodine background. On the palate, it is juicy and concentrated, crisp and rich, with a smooth texture and a well-defined minerality. It is refreshing with a citrus finish and toasted, saline notes. Try it with guinea fowl breast stuffed with mushrooms or with Comté cheese.
