Wire Works Heritage Chevallier is the very first non-peated single malt release from White Peak Distillery. Chevallier is a heritage barley variety that was dominant in England from the 1820’s to 1920’s.. Superceded in the modern pursuit of yield, Chevallier has a unique flavour profile that we wanted to explore in our early years of distilling; robust maltiness with a rich marmalade character. The initial new make was amazing and after years in ex-bourbon barrels we’re excited to offer one of the first, contemporary era whiskies made from Chevallier malt.. 100% Natural colour & Non-chill filtered. Total Bottles produced: 999. TASTING NOTES. Overview: Rich and sweet, herbaceous, biscuity, grassy and spicy, with an indulgent creamy texture.. Nose: Baked vanilla cheesecake, rhubarb and custard, fruit salad sweets, strawberry laces, wood glue, watermelon, apple pie.. Palate: White chocolate, cassia, celery, vanilla extract, kashmiri chilli, tamarind, rose, malted milk biscuits, hay, oolong tea.. Finish: Delicate liquorice, baking spices, fresh cut grass, icing sugar.. White Peak, a Derbyshire distillery established in 2016 by Max and Claire Vaughan, crafts English whisky, rum, and gin. Situated at a UNESCO World Heritage Site, a former wire works near River Derwent: thus the Wire Works brand. Their on-site process, from mashing malt to slow fermentation, influenced by local yeast, creates a unique flavour profile.
