Historic Stellenbosch estate DeMorgenzon is so-called because it’s the first part of the valley to see the morning sun. Under winemaker Alastair Rimmer, grapes are tended ethically and in an environmentally friendly manner. And, with imagination: Baroque music is piped into both vineyards and cellars 24/7, to stimulate and nurture the wine’s development. This version of South Africa’s favourite white grape, Chenin Blanc, has aromas of green apple, apricot, honey and flowers. Rich and integrated, it’s a natural pairing for spicy chicken dishes or fresh Caesar salad.
