Drink it now or cellar for up to 30 years. It is recommended to decant it for an hour. Elected New World Winery of the Year by the prestigious Wine Enthusiast magazine in 2013, the Penfolds winery has a very long history that dates back to the end of the nineteenth century when Christopher Rawson Penfold and his family reached Australia from England, with some vine cuttings of French vines and the intent to produce medicinal wine. It was then in the 1950s, with Max Schubert's entry into the company, and the creation of the Grange cuvée, that Penfolds achieved international success and prestige. The Bin 407, first produced with the 1990 harvest, is made with Cabernet Sauvignon grapes, sourced from various sites located in the McLaren Valley, Barossa Valley, Coonawarra, Padthaway, Wrattonbully regions. The finished wine is aged in a mix of French and American oak for 15 months. The wine reveals a deep color with ruby tones. On the nose it shows all the aromatic power of Cabernet Sauvignon, with notes of dark fruit such as blackberry, ripe cherry, and currant and then some balsamic and spicy hints, followed by hints of cocoa and cedar, due to aging in wood. On the palate, it is rich and dense, concentrated and well-balanced. The tannins are firm but ripe and the acidity is balanced. The finish is long and persistent. Try it with red meat or game.
