La Brujula Sardines

Ortiz buys their sardines at auction houses (lonjas) on the north coast of Spain. The fish are carefully headed and gutted by hand before being washed and prepared for cooking. They are briefly fried in oil before being tinned in olive oil. A la Antigua describes those products on which the silver skin is kept on the fish. Like wine, you can create a cellar as the flavour and quality improve over time, becoming more tender and delicate as they age.  These sardines are perfect in salads, on toast, sandwiched, added to pasta, or enjoyed straight from the tin.
