75cl / 13.5% - This Corsican wine needs time to develop in the glass, but when it does, it perfectly captures the essence of the region. There aromas of wild thyme, rosemary, carraway seed and a lovely minerality on the nose, followed by notes of cranberry, bright citrus and more minerality on the palate. This wine wants food with some fattiness, like fried white bait and charcuterie.
