Also known as square sausage, Lorne sausage is a Scottish tradition and an essential element of Scottish breakfasts, in part due to its shape which makes it ideal for sandwiches and rolls. The square shape is achieved by assembling the sausage meat and setting it into a loaf, and then slicing it into approximately 16-18 slices. The slices are then fried to perfection and served. Ayrshire style Lorne sausage differs from normal Lorne sausage in that it contains lamb mince as well as beef mince, creating a premium square sausage option.
