Their farms are built on the sites of old water mills which allow the fish to grow in a constant current which mirrors their natural river environment. Trout sashimi is not as well known as perhaps salmon, or tuna, but it definitely should be! The taste is delicate but delicious (some say a little nutty), and of course it does look stunning. With it's beautiful orange flesh and white marbling, it makes a wonderful topper for nigiri.
