Drink it now or cellar for up to 10 years. No need to decant, but best to open it half an hour before service. Founded in 1987, Domaine Merlin is located in southern Burgundy, a short distance from Macon. The estate initially extended over 4.5 hectares of vineyards acquired from Domaine du Vieux Saint-Sorlin, then was expanded with the purchase of several parcels in La Roche-Vineuse, Moulin-à-Vent and Pouilly Fuissé. The Gamay grapes for this Moulin a Vent come from the Les Brasses, Les Hantes, Les Vérillats, and La Roche plots located at about 230 meters above sea level and purchased in 2006. Here, the vines enjoy a south-east exposure with a slight slope and a granite soil rich in manganese. The work in the vineyard is manual and with the help of horses for plowing. After the harvest, fermentation takes place in wooden vats. The finished wine then rests for about a year and a half in oak barrels before bottling. In the glass, the wine reveals an intense and brilliant color with dark ruby tones. Its aromatic profile is lively and expressive, with floral and fruity notes on a background of delicate spices. On the palate, it is concentrated, round, and soft with a medium body, silky tannins, and a well-balanced acidity. The finish is long and fruity, with spicy hints. Try it with a rack of veal or a chicken escalope.
