Drink it now or cellar for up to 15 years. No need to decant, but best to open it half an hour before service. Santa Rita is a major Chilean winery founded by Don Domingo Fernández Concha in 1880. At that time, Don Domingo brought many technological innovations and several French varieties to Chile, achieving astonishing results and fostering the modernization of Chilean viticulture. Since 1980, the company has been part of the Claro Group, which has invested in new equipment and cutting-edge methods to consistently maintain excellent quality. The Cabernet Franc grapes for Floresta are sourced from approximately 20-year-old vineyards located in Pumanque, in the coastal region of Colchagua. After fermentation, half of the wine is aged for approximately a year and a half in new French oak and the other half in used barrels. In the glass, the wine reveals an intense ruby color with purple hues. Its aromatic profile is broad and fragrant, with notes of raspberry, cherry, and strawberry interspersed with floral and herbal notes, on a spicy background. On the palate, it is full-bodied and juicy, linear and well-structured with firm, well-integrated tannins and a long, refreshing finish. Try it with chicken or turkey with aromatic herbs, with tomato and basil pasta, or even with goat cheeses.
