Drink it now or cellar for up to 10 years. No need to decant, but best to open it half an hour before service. Torres is a renowned family-run Spanish winery. The Torres family's winemaking operations date back to 1557, but the winery was actually founded by Miguel Torres Vendrell in 1870. Since then, the company has been passed down from father to son, and since 2012, it has been led by Miguel Torres Maczassek. Salmos is a blend of Cariñena and Garnacha grapes from low-yielding vineyards located in the village of Porrera, in the Priorat wine region, planted on steep slopes with slate soil. The climate here is characterized by significant temperature variations between day and night, and these conditions favor slow grape ripening and the development of rich aromas and lively acidity. After temperature-controlled fermentation in stainless steel, the wine ages for approximately 15 months in French oak. The wine, first produced in 1996, is a tribute to the monks who planted the first vineyards in this region in 1095. On the nose, the wine reveals a broad and intense aromatic profile with notes of ripe red fruit (especially cherry and raspberry) and dried plums, followed by hints of marzipan and vanilla. On the palate, it is concentrated and rounded with velvety tannins and an elegant, generous character. It has a medium body and a long finish that evokes toasted notes. Try it with game birds.
