Product Description
Drink it now or cellar for up to 15 years. It is recommended to decant it for an hour. Created by Emile Dubois, the Chevalier estate has a long family tradition spanning over 5 generations and nearly 180 years. Today, the estate, run by Claude and his 3 daughters, owns vineyards covering around 15 hectares spread across some of the most renowned appellations in Burgundy, including Aloxe-Corton, Ladoix, and Gevrey-Chambertin. The Pinot Noir grapes are carefully selected from a plot of about 1.5 hectares with 25-year-old vines, located in the Aloxe Corton appellation. The vinification takes place in the traditional way, with a period of cold pre-maceration followed by fermentation in thermoregulated vats. The finished wine then rests for a year in oak barrels (a quarter of which are new). This elegant Aloxe Corton shows an intense color with dark ruby tones. Its aromatic profile is broad and mature, with notes of currant and candied cherry, spicy hints, and caramel. On the palate, it is round and fleshy, balanced and smooth. It is vigorous but soft, with a pleasant balance and a good fruit concentration. The finish is long and fresh. It is an excellent match for game birds served with spicy sauces, with hare or Vacherin cheese.
