Golan Heights is an Israeli winery founded by a collective of eight kibbutzim and moshavim in the town of Katzrin in 1983. Since 1992, the head winemaker has been Victor Schoenfeld, who, with his experience and talent, has succeeded in elevating the quality of their wines and bringing the company to prominence. Gamla Cabernet Sauvignon is a full-bodied and elegant red, produced exclusively with Cabernet grapes from vineyards in the Upper Galilee, on the Golan Heights, where the cool climate favors full aromatic development and slow phenolic maturation. After harvest, fermentation takes place in stainless steel tanks, and the finished wine then ages in oak for a year. In the glass, the wine reveals a clear ruby color with bright cherry highlights. Its aromatic profile is fruity and lively, with notes of cherry, currant, and plum, followed by hints of fragrant herbs and a light touch of cocoa. On the palate, it is dry, expressive, and full-bodied, with a velvety texture and a pleasant, well-integrated acidity. The finish is long and juicy. Try it with meat and mushroom pies, grilled pork chops, or lamb stew with Mediterranean herbs.
