Drink it now. No need to decant. The Thymiopoulos family has been cultivating their vineyards for many generations. But it was Apostolos Thymiopoulos who revolutionized the family domain. He stopped selling grapes to other wineries and started producing his own wines by focusing on the potential of the native Xinomavro grape. The Xinomavro grapes come from young vine plants located in different plots around the municipality of Fytia, at about 450-650 meters. Here the soils are composed of schist and granite and the climate is continental with remarkable temperature variations between day and night and refreshing winds. After a 12-hour maceration, Rosé de Xinomavro vinifies spontaneously with indigenous yeasts in stainless steel tanks for 5 or 6 months. The wine is then aged in second use 500-liter oak barrels. The wine has a pinkish color tending to orange, and a fresh and delicate bouquet of red fruits, wild strawberries, cherries, and raspberries, flanked by the scent of roses and pungent notes of tomato, aromatic herbs, and spices. In the mouth, the wine is balanced, full, with benevolent tannins and very fine minerality and offers beautiful sensations of creamy complexity. It is a very expressive and lively wine that recalls the flavors and smells of the Mediterranean. Try it with vegetarian tarts, fish, and sushi.
