Product Description
Drink it now or cellar for up to 8 years. No need to decant. Since 2007, the young Marof winery has been producing excellent wines in the far north-east of Slovenia, using organic practices and a philosophy of minimal intervention. The Sauvignon Blanc grapes come from a vineyard in the small sub-appellation of Goričko, a jewel of unspoiled nature and one of the lesser-known wine regions in Slovenia. The vines, aged between 10 and 29 years, are planted at an average altitude of 315 meters on soils consisting of flint gravel, silica sand, and sandy clay. The woods surrounding the vineyard create a special microclimate that is cool and dry, ensuring the production of wines with good acidity and aromatic character. After manual harvesting, fermentation takes place with indigenous yeasts and the finished wine then rests on the fine lees for 15 months in a mix of 600-liter and 30-hl oak barrels. The result is a lively, fresh wine with good complexity. On the nose, it reveals a broad and fragrant bouquet with aromas of elderflower and yellow fruit, mango and honey, butter and dried herbs. On the palate, it is full-bodied and vigorous, juicy and citrusy with a bright acidity and a long finish that recalls smoky notes. It is an elegant and balanced wine that goes well with fish and seafood, asparagus, and many vegetarian recipes.
