Fanny Fougerat – better known for bottling Cognac and Pineau des Charentes – offers this eau-de-vie de vin as a demonstration of how flavoursome and expressive grape spirits can be without the benefit of cask ageing. With its intense fruitiness and notes of chocolate and soft herbs, Alma Mater makes an excellent aperitif and a natural substitute for white rum in cocktails like the Daiquiri.
