Drink it now or cellar for up to 15 years. No need to decant, but best to open it half an hour before service. Located in Puligny-Montrachet, Domaine Alain Chavy is a small Burgundy estate founded in 2003 when Alain inherited a portion of the family vineyards. The estate now has around 6.5 hectares of vineyards, spread across two of Puligny Montrachet's finest Premier Cru sites (Folatières and Clavoillon), as well as a small holding in Les Pucelles. Renowned for producing excellent value wines, the estate also owns the deepest underground cellar in the village. The Chardonnay grapes are harvested manually from vines over 20 years old. After fermentation in oak barrels with indigenous yeasts, the wine rests on the lees in barrels (30% of which are new) for 1 year and for a further 6 months in tanks. Saint Aubin Premier Cru En Remilly has a rich and captivating aromatic profile with delicious notes of ripe citrus and floral scents, followed by a final touch of minerality. On the palate, it reveals a medium body and a sharp acidity. It is elegant and balanced, fruity and linear, complex and silky, with a pleasant fruit concentration and a long and persistent finish that recalls clear mineral notes. It is a wine ready to enjoy now with salmon or smoked trout, with veal or poultry, but can also remain in the cellar for a few years.
