Drink it now or cellar for up to 10 years. No need to decant, but best to open it half an hour before service. Founded in the late 1980s by cousins Martin Shaw and Michael Hill Smith, Shaw and Smith is located in the Adelaide Hills, in one of South Australia's most renowned wine-growing areas. The company owns approximately 55 hectares of vineyards where it grows varieties suitable for the cool climate such as Sauvignon Blanc, Chardonnay, Pinot Noir, and Shiraz. The Pinot Noir grapes are sourced mainly from the Lenswood vineyard located at approximately 450-500 meters above sea level and planted in 1999 with Chardonnay and Pinot Noir. Here the vines enjoy an undulating terrain with exposure to the east and west and clayey soils. The harvest is manual and fermentation is partly made with whole bunches. The finished wine matures in French oak. The Shaw and Smith Pinot Noir is an elegant and expressive wine with a complex and fragrant aromatic profile characterized by notes of red and dark fruits, floral hints, hoisin, and then dried herbs, leather, and cedar. On the palate, it is concentrated and full-bodied with velvety and well-integrated tannins and bright acidity. The finish is long and deep and recalls gamey aromas. Excellent with duck or lamb with herbs.
