Product Description
Drink it now or cellar for up to 15 years. It is recommended to decant it for an hour. Located in Millahue, in Chile's Cachapoal Valley, the VIK estate was founded in 2004 by the Viks and today encompasses approximately 270 hectares of vineyards. The company boasts a state-of-the-art winery, overseen by winemaker Cristián Vallejo. The wine is a blend of approximately 3/4 Cabernet Franc and 1/4 Cabernet Sauvignon. The grapes come from the Las Casas and La Lazos parcels, respectively, both located in the Millahue Valley, where the Mediterranean climate is influenced and tempered by the ocean, which moderates maximum temperatures. The Cabernet Franc vines are planted in silty-clay soils, which favor the aromatic development of the grapes. The Cabernet Sauvignon vineyards, on the other hand, benefit from sandy-clay colluvial soils with 50% sand, which guarantee the production of wines with firm and elegant tannins. After vinification, the wine ages for 12 months in barrels made exclusively from the estate's oak. The result is an expressive and refined wine with a broad and complex aromatic profile, revealing notes of ripe forest berries, currants, and blackberries, followed by delicate spicy and licorice hints. On the palate, it is smooth, silky, and well-structured, with a lively and well-balanced acidity and firm, well-integrated tannins. It is concentrated and round, with a long finish that recalls notes of graphite. Try it with Mediterranean-style roast lamb or with herbed pork roll. It is also excellent with red meat stews.
