Drink it now or cellar for up to 15 years. It is recommended to decant it for half an hour. Founded in 1880 by Don Domingo Fernández Concha in the Maipo Valley, Santa Rita is one of Chile's most prominent wineries, having historically played a pioneering role in the country's winemaking history. The estate owns approximately 3,800 hectares of vineyards spread across the Central Valley, from which it produces a wide and diverse range of wines. Since 1980, Santa Rita, now managed by Oscar Salas and Sebastien Labbe, has been part of the Claro Group. The Cabernet Sauvignon grapes come from the Alto Jahuel vineyards in the Maipo Valley. Here, the vines, located at the foot of the Los Ratones mountain range at an altitude of 637 meters, are rooted in colluvial soils with a high stone content and low clay content. The southwest exposure and warm climate, tempered by mountain breezes, create ideal ripening conditions for Cabernet Sauvignon. After manual harvesting and spontaneous fermentation, the wine ages for months in used barriques. In the glass, Floresta Cabernet Sauvignon reveals a deep, dark ruby color with dark reflections. Its aromatic profile opens with intense fruity notes of raspberry and cherry, followed by hints of tobacco and graphite. On the palate, the wine is full-bodied, fresh, and well-balanced, with firm, well-integrated tannins and a pleasant, refreshing acidity. The finish is long and fruity. It is excellent with chili con carne and grilled red meats.
