Simonnet-Febvre 'Vaillons' Organic Chablis Premier Cru 2022/23

Simonnet-Febvre, one of Chablis' oldest wineries, was established in 1840 by barrel maker Jean Febvre. Now under the ownership of Maison Louis Latour, the estate upholds a rich tradition of crafting exquisite wines. This Vaillons Premier Cru showcases the distinctive characteristics of its terroir. The name 'Vaillons' derives from the Latin 'vallis,' meaning 'small valley', which aptly describes this climate’s position on the left bank of the Serein River. The soil here features less clay compared to the right bank, with a higher concentration of limestone and marine fossil deposits from the Kimmeridgian period – an essential trait of Chablis’ renowned terroir. Expect fresh notes of delicate white flowers, white stone fruits and a persistent, characteristic mineral finish. Its crisp acidity makes it a great pairing for fish, seafood, asparagus and goat’s cheese.
