Founded in 2016 by Alexandre Graffard, the Henri Champliau winery produces sparkling wines in the heart of Burgundy, more precisely in Mercurey, with the Charmat or Champenoise method. The company, which bears the name of the founder's grandfather, a great lover of horse racing and wine, works as a negociant, personally selecting the grapes for the production of its wines, in order to guarantee the highest quality. The name of the wine is a tribute to Henri Champliau's passion for horse racing and Petrone's victories at Paris Longchamp and in the United States. The wine is a blend of Chardonnay, Colombard, and Ugni Blanc. The grapes are fermented in a horizontal tank to encourage contact with the grape lees and the extraction of maximum aromatic potential. Before being placed on the market, the wine is aged for 3 months to achieve perfect integration of the bubbles. The Cremant de Bourgogne Petrone 68 Blanc de Blancs Brut has a lively, clear color and fine, persistent bubbles. The nose reveals vibrant aromas of yellow fruit, in particular apple and pear, and some citrus notes. On the palate, it is fresh, round, and soft with a long and delicately citrus finish. It is perfect as an aperitif, also used in cocktails, and pairs well with vegetarian starters.
