Drink it now or cellar for up to 10 years. No need to decant, but best to open it half an hour before service. Founded in 1797, Domaine Louis Latour is a renowned winery in Burgundy's Côte d'Or. For over 200 years, it has been independently managed by the Latour family, now in its seventh generation. The estate's vineyards span approximately 50 hectares, 30 of which are in Grand Cru appellations (including Corton Charlemagne, Montrachet, Bâtard-Montrachet, and Chambertin). The company, which has two locations (in Beaune and Aloxe-Corton), also purchases grapes from trusted winemakers in the region. Chardonnay grapes are hand-picked from vineyards located within the Pouilly-Fuissé appellation, from vines averaging 30 years old and planted on soils composed of limestone and heavy clay. After temperature-controlled fermentation in stainless steel, the finished wine ages in stainless steel for 8-10 months. Pouilly-Fuissé by Louis Latour is an elegant and delicate wine, characterized by a bright straw-yellow color and a lively, fragrant aromatic profile that reveals notes of acacia blossoms and honeysuckle, with hints of honey and almond. On the palate, it is broad and round, with a medium body and refreshing acidity. The finish is persistent and recalls floral notes. It is the ideal wine to pair with shellfish, seafood pasta, and fresh cheeses.
