ABOUT THE WINE. Roebuck Estates is fast becoming a reference point for English sparkling wine. Planted from 2006 and now spanning four prime vineyard sites across Sussex, the estate focuses on the classic Champagne trio—Chardonnay, Pinot Noir and Pinot Meunier—grown on diverse soils under cool-climate conditions. The 2019 Classic Cuvée showcases Roebuck’s precise, quality-driven approach: hand-picked fruit, traditional method, and an extended maturation of over three years on lees to build depth, texture and finesse. A portion of the base wines is fermented in French oak to add subtle spice and creaminess without masking the fruit.. TASTING NOTES. Pale gold with a fine, persistent mousse. Aromas of lemon zest, baked apple and white blossom segue to patisserie notes—brioche, toasted almond, a hint of pastry cream. The palate is crisp yet generous, layering citrus curd and orchard fruit with delicate nutty complexity from time on lees and partial oak. Bright acidity and a clean mineral line drive a long, poised finish.. FOOD PAIRING.
