Drink it now or cellar for up to 20 years. It is recommended to decant it for an hour and half. Founded in Naoussa, in the northern part of Greece, Boutari is a winery with a winemaking tradition of over a century, which today has locations in various regions, including Santorini and Crete. Since 2022, the company has been part of the Sterner Stenhus Greece group. The 1879 Boutari Legacy is a Xinomavro that pays homage to the winery's history and its founding date. The grapes come from a cru vineyard located in Trilofos, in the province of Thessaloniki, in Naoussa. After harvesting, a short cold maceration, and fermentation with selected yeasts, the finished wine rests for about 2 years in new French oak barrels. The result is an elegant, modern wine that can age well for a couple of decades. In the glass, the wine reveals an intense color with dark red tones and a broad aromatic profile with notes of plum, cherry, red berries, tomato juice, and dried figs, followed by hints of spice and tobacco. On the palate, it is full-bodied and round, with soft tannins and a pleasant refreshing acidity that provides balance. The finish is long and warm and recalls lightly spicy notes. Its structure and complexity of flavors make it ideal for a game stew or a red meat pie.
