Drink it now or cellar for up to 5 years. No need to decant. The Israeli Golan Heights winery is located in Katzrin, in the Golan Heights, on the site of an ancient farming village. It is the third-largest winery in the country. The winery owns 16 vineyards spread across the Golan Heights and the Upper Galilee. American winemaker Victor Schoenfeld leads it. The Sauvignon Blanc grapes originate from vineyards situated in the Golan Heights, where they benefit from a fertile terroir and a cool microclimate, thanks to the altitude, which is particularly favorable for the production of aromatic white wines. After harvesting and vinification at low temperatures, the wine ages in stainless steel to preserve its purity and freshness. The result is a youthful and vibrant wine, balanced and elegant. On the nose, it reveals a fresh and fragrant aromatic profile with notes of lime and green apple, passion fruit, and melon, set against a flinty background. On the palate, it is lively, refreshing, and juicy. It has a fruity character and a medium body. It is round and smooth, with a bright acidity and a long, fruity finish. It is perfect as an aperitif, but also pairs very well with shellfish, herb risottos, salads, and spicy Asian dishes.
