The first sip reveals a gentle and persistent mousse with seductive flavours of white peaches, citrus and toast. A modest dosage of 8 grams per litre provides a subtle touch of sweetness to balance the crisp acidity. The graceful character of this Reserve means it is perfect as an aperitif before dinner or as an accompaniment to fine fish dishes or Asian cuisine with a touch of spice. Created using the same method that is used for the sparkling wines of Champagne, the wine undergoes a second fermentation in the bottle to produce the fine, persistent bubbles. It then spends 18 months maturing with the lees which helps to add rich pastry and nut flavours and aromas to the finished wine. The Antech Reserve is a true testament to the talent and well-deserved reputation of the Antech family who have been making Blanquette de Limoux for six generations. Widely regarded as one of the region’s top sparkling wine producers, the estate is today run by brothers Georges and Roger along with Georges’ daughter Francoise who is responsible for the winemaking.
