Cut from the centre of the fish, our Centre Cut of Trout is larger than our single fillets and is great for baking or grilling with fresh herbs and seasonal vegetables.Our freshwater rainbow trout are farmed by Arthur and his team in Hampshire. Fed by chalk springs, these nutrient-rich waters create a clean, verdant habitat that gives the trout their signature delicate flavour. Farming takes place on historic mill sites using the natural current to power custom raceways, with water returned to the river in excellent condition. ChalkStream is recognised for its sustainability credentials and is highly praised by Michelin-starred chefs as a standout British alternative to salmon.
