Cellar for 20 years or more. Decant for up to an hour before serving. San Giusto a Rentennano is one of Tuscany’s finest establishments. Its headquarters is an ancient Cistercian monastery and former defensive fortification, located directly on the historical border between Florence and Siena. Today, its underground cellars are used for more productive purposes - the fermentation of delicious Tuscan reds, in enormous oak barrels. Now owned by members of the Martini di Cigala family, the winery is spread across 31 hectares of prime Tuscan land. San Giusto wine is made exclusively from estate vineyards, so the winery has complete creative control. Yields are often curbed by up to 50%, in order to produce fruits of the highest possible quality. “Le Baroncole” is a big, potent and authentic taste of the Chianti region. If you have never tried a Classico before, this is a beautiful introduction. It showcases a powerful nose, packed with black cherry, ripe plum, and warm, comforting notes of leather, tobacco and black tea. Further herbal complexities reveal themself as the wine breathes. It has a focused, silky palate, replete with intoxicating dark fruits, chewy tannins and a solid core of acidity. Notes of marzipan and sweet red fruit reveal themselves on the finish. Match this wine with rich tomato-based dishes or hard Italian cheeses, such as Pecorino and Parmigiano.
