For a smokier flavour repeat as necessary.For a real experience you can smoke at the tableside. Fill a glass serving cloche or upturned glass with smoke and place over the plate of food. Allow the smoke to infuse for several minutes before theatrically lifting off the cloche in front of your wowed guests!To smoke condiments or sauces place in a bowl and cover with plastic wrap. Insert the smoking tube and fill with smoke. Let the food take on the smokey aromas before releasing the smoke.To add a smokey flavour to a cocktail prepare your drink in a shaker and fill with smoke.
