Best know for Sangiovese, Rimini also produces structured Bordeaux varietals such as Merlot, Cabernet Sauvignon and Cabernet Franc. The vineyards benefit from calcareous marl where Cabernet Sauvignon growns as well as dark brown clay fot the Merlot and orange and red clay soils for the Sangiovese. Terre Cevico is a wine cooperative founded in Emilia Romagna in 1963 by a group of Romagna winegrowers and cooperatives, with the goal of implementing a shared strategy for grape and wine production. The winemaker Enrico Salvatori has been working with Cevico since 2009, before which he had experience in California, South Africa and Bordeaux. He's focused on producing wines that express Rimini and Romagna's uniqueness, from both indigenous and international varieties. This wine is usually is aged 12 - 18 months in a combination of cement tanks and big "foudre" of french oak. It deliveres rich notes of blackcurrant and red plum along with a touch of spicy and toasted oak. It's medium- bodied with a supple tannic texture, a long mineral finish and soft acidity. It pairs especially well with roasted meat, hard ripened cheese and filet mignon.
