The Cornish Cheese Company Extra Mature Cornish Cheddar is sweet, creamy and exquisitely full flavoured.  This waxed cheese is intensely well rounded and produced to offer a slight crunch in texture due to the formation of naturally occurring calcium lactate crystals which are found in high quality aged waxed cheddars.  The crystals appear as white flecks and continue to develop as the cheese matures, enhancing both the character and the mouthfeel of the cheese. 200g, Extra mature, Produced in Cornwall, Pasteurised Cows Milk., Suitable for vegetarians., Keep well wrapped in the fridge but we do recommend removing cheese from the fridge and any wrapping to allow the cheese the ‘breath’ for an hour or two before serving which will allow the full flavour and character of the cheese to come through.
