- Fat for cooking (lard or beef dripping works best)
Method
- Add the flour, eggs, milk, Guinness, and a pinch of salt into a mixing bowl.
- Whisk until the batter is completely smooth and about the consistency of single cream.
- Let the batter rest for at least one hour, this helps the gluten relax and gives you a better rise.
- Preheat your oven to 230°C. Add a small spoonful of fat to each section of a muffin tray and heat until smoking hot.
- Carefully remove the tray and quickly pour the batter into each section.
- Bake for 15–20 minutes until risen, crispy, and beautifully golden.
