The family-run Akashi Sake Brewery has been crafting sake in Akashi, a coastal town in Hyogo prefecture, since 1856. Hyogo's pure water sources and ideal climate for cultivating Yamadanishiki rice, combined with the Yonezawa family’s unwavering commitment to true craftsmanship, give Akashi-Tai its distinctive quality and its place as the UK’s leading premium sake. Kimio Yonezawa, fourth generation Sake Master, and his team carry on the tradition by brewing by hand in small vats, overseeing each stage with meticulous care, while also prioritising innovation. Using only the finest local ingredients, Akashi-Tai Ginjo Yuzushu is made by macerating yuzu, a Japanese citrus fruit, in ginjo-grade sake. It’s sweet and zesty with hints of mandarin and pink grapefruit, with clean and fresh acidity keeping it light on the palate. Serve it chilled or long over ice with tonic or sparkling water. Endlessly versatile, it's perfect alongside a cheese board.
