Drink it now or cellar for up to 8 years. No need to decant. Located on the Greek island of Santorini, Santo Wines was established in the late 1940s as a union of cooperatives. The brand represents all the island's vine growers and is the largest wine producer of Santorini wines. Based in Pyrgos, Santo Wines produces excellent local wines and is an ambassador of the island's biodiversity and winemaking traditions. Santo Wines Nykteri is a blend of the indigenous Assyrtiko, Aidani, and Athiri grapes sourced from 40 to 60-year-old vines located in the municipality of Pyrgos, up to 400 meters above sea level. The grapes are pressed the night following the harvest, according to the ancient winemaking practice of the famous Nykteri wine (wine of the night). The result is a warm and concentrated wine with a strong fruity character. The wine reveals a clear color with medium intense lemon yellow tones. Its aromatic profile is fresh and fragrant with floral notes of jasmine and fruity notes of apple and pear, followed by light hints of vanilla. On the palate, it is dry and thirst-quenching, with an invigorating acidity. It's juicy and balanced. The finish is long and recalls light spicy notes. It is perfect with chicken and rich seafood salads.
