After destemming, the grapes undergo a brief cold maceration to capture their aromatic potential before fermenting in stainless steel and concrete, preserving the wine’s vibrant and delicate character. The result is a crisp and aromatic wine with citrus and floral notes, underpinned by subtle hints of Mediterranean herbs.
