Domaine Chevalier Ladoix Premier Cru Les Grechons 2023

Drink it now or cellar for up to 20 years. It is recommended to decant it for half an hour. Located in the Cote de Beaune, in the village of Ladoix-Serrigny, Domaine Chevalier was founded by Emile Dubois in 1850 and then taken over by his great-grandson Claude Chevalier in the 1990s. Today, the Domaine is recognized as one of the most prestigious estates in Burgundy, with its 15 hectares of vineyards spread across the region. The Chardonnay grapes for the Ladoix Premier Cru Les Grechons come from a hillside vineyard of about half a hectare with vines over 25 years old planted on white soil. The long fermentation (from 6 to 12 weeks) takes place in oak barrels where the wine then rests for 10-12 months before clarification. This splendid Chardonnay has a brilliant color with light golden tones and some delicate greenish reflections. On the nose, it reveals a fresh and fragrant aromatic profile with notes of citrus, pear, ripe apple, and peach, followed by floral and spicy scents. On the palate, it is round and medium-bodied. It has a velvety texture and a pleasantly refreshing acidity. The finish is long and elegant and recalls light notes of hazelnut. It is excellent with fish in white sauce, sushi, and goat cheese.
