Noble Coyote Jabali Mezcal

70cl / 48% - Celebrating the amorphous legend of the coyote, this exotic mezcal from Santiago Matatlan, Oaxaca, is made with the rare Jabali agave. As a complex variety, only a handful of mezcaleros know the secrets to the craft of successfully distilling the plant to make mezcal – one of the few being Jose Perez Santiago. This expression offers vegetal and herbal aromas of lemongrass, dried anise and bacon grease, joined on the palate by oriental spices, dried mint and high mineral notes.
