Drink it now or cellar for up to 8 years. No need to decant, but best to open it half an hour before service. Founded in 1816, the Jaffelin house is located in Beaune, Burgundy, where it occupies the ancient 12th-century cellars of the Chapitre of Notre-Dame. The company, now part of the Boisset group, is considered the smallest of Burgundy's great estates and produces excellent wines from both small villages like Rully and more famous appellations such as Beaune, Gevrey-Chambertin, and Nuits-Saint-Georges. The Chardonnay grapes come from Burgundy's foothill vineyards, with soils of varying composition (marly and calcareous-marly, whitish or light gray, deep and slightly stony) depending on the geographical area. After manual harvesting and vinification, the finished wine ages for 11 months in used oak barrels before bottling. Jaffelin Bourgogne Chardonnay is a fresh and mineral regional wine with a bright yellow color and golden highlights. Its aromatic profile is fragrant and broad, with notes of citrus and pear, ripe apple, and apricot, and some light hints of butter. On the palate, it is lively and refreshing, juicy and smooth, with good fruit concentration and well-balanced acidity. It is the ideal wine for an elegant aperitif and pairs well with cured meats and goat cheeses, as well as, of course, white fish and shellfish.
